Yummiest Soup on the block!

So I was the recipient of this soup one night from a lovely friend.

I don't normally eat left overs as I have a strong feeling about them rooted in my fear of what my Dad could make from leftovers.
BUT I hid the soup left overs behind containers in my fridge so I could enjoy them on Day 2...bwhahahaha

Chicken Wild Rice Soup

2 Pkg. Wild Rice Mix (Uncle Ben's; cooked)
5 Chicken breasts (cooked and cubed)
4 or 5 Cups of water
1 cup chopped celery
1/2 chopped onion
1 cup chopped mushrooms
1 cup chopped carrots
2 can chicken broth
salt and pepper to taste
4 cups of milk
1/2 cup Butter
3/4 Cup Flour

Cook rice and chicken and combine in pot with water. Saute veggies in saucepan with olive oil. Add to pot. Melt margarine in saucepan and add flour. Wisk in milk until bubbly and thick. Add milk mixture and chicken broth to pot and give it a stir.

Simmer soup for 15 minutes or so.

I just made half this recipe and it makes a LOAD of soup. SO if you make the full recipe plan to be a lovely friend and pass it own to another family for dinner.

Food Storage meet my Grocery list...

We had an enrichment fair a few weeks ago and one of the booths was on how to shop for 3 months supply and plan meals accordingly. I was excited about this and went home and cleaned/inventoried my cupboards.
Anyway, the list and recipes come in excel worksheet and they figure for you how much you would have to buy. There is a just 1 month option also.

Also, I went shopping last night at Costco. I planned on getting the 1 month supply to see how this goes, and when in Costco....I actually ended up with about 60 days worth of food and the bill was only $350. This is about what we pay in 1 month. So I was excited that I paid 1 months grocery bill and got 2 months supply. I expect we will have to go to the store for incidentals, but this is a great savings.

the grass is greener in my yard these days

I haven't made an update in a while. I finally peeled myself off the couch on Wednesday after being hit with both the flu and morning sickness. But it seems the flu chased my morning sickness away and I am feeling renewed.

On Saturday we laid the sod in our backyard. It rained the 5 days prior and the entire day as we worked to lay out the sod. Sunday finally brought sun, as it usually does, and the grass is beautiful. I can't wait to have a BBQ, play croquet, horseshoes, and norweigen golf.

Now I am back on the couch because I am so sore from working on the sod and can't hardly bend my legs :)
